Stirchley massala

Have a jar full of it mixed up and ready to rumble with. This is the basic version - miss a few components out and alter some of the quantities to get a slightly different flavour each time. As presented here it's deliberately light on the chilli powder because the rest of my family can't cope with chilli powder - you can add more if your family digs it.

Ingredients
- Condiment, cube, or tube
- Swiss bouillon - 3 teaspoon
- Herb
- Fenugreek leaves - 3 teaspoon
- Curry leaves (ground) - 2 teaspoon
- Spice
- Coriander (ground) - 4 teaspoon
- Cumin (ground) - 4 teaspoon
- Chilli powder - 3 teaspoon
- Fennel seed (ground) - 3 teaspoon
- Turmeric - 3 teaspoon
- Fenugreek seed (ground) - 2 teaspoon
- Paprika - 2 teaspoon
- Star anise (ground) - 2 teaspoon
- Asafoetida - 1 teaspoon
- Cardamom pods (ground) - 1 teaspoon
- Garlic granules - 1 teaspoon
- Ginger (ground) - 1 teaspoon
- Mustard seed (ground) - 1 teaspoon
- Nigella seed - 1 teaspoon
- Pepper (white) - 1 teaspoon
Method
Add the ingredients one by one, mixing thoroughly each time. I actually mix straight into the jar I'm going to be storing it in - your mileage may vary.
