Prosciutto-wrapped mozzarella with egg and olives
Breakfast
It's like the Italian version of a full English breakfast
Cooking method: Pan fry
Serves: 2
Time: Quick - less than 30 minutes
Difficulty: Average - a standard adult who feeds themself could do it
Equipment
- Frying pan
- Saucepan
Ingredients
- Eggs / cheese / dairy
- Eggs - 2 some
- Cheese (mozzarella) - 1
- Meat
- Ham (prosciutto) - some
- Vegetable
- Olives - some
Method
Bring a pan of water to boil, and put your eggs in it; boil them to just past runny - let's call that seven minutes.Take the big blob of mozzarella out of the packet and slice it into slices. Open the packet of prosciutto and wrap each slice of mozzarella in a slice of prosciutto. Heat some oil in a frying pan, put the wrapped mozzarellas in it and lightly fry both sides.
Open the eggs and slice them in half lengthways and put them on your plates. Add the mozzarellas, and some olives, and any remaining prosciutto from the packet, if there is any. Drizzle the oily jus from the frying pan over the eggs.
You can zhuzh it up a bit more with some torn fresh basil, a tiny drizzle of extra virgin olive oil, maybe a sliced pomodoro tomato, and a slice of lightly toasted ciabatta. If you don't need to leave the house and use heavy machinery or power tools for a few hours you might have a small glass of sambuca with it, but please drink responsibly.
