Celery and carrot soup

Lunch - Vegetarian

Cooking method: Pressure cooker
Serves: 2

Time: Average - 30 to 60 minutes
Difficulty: Easy - a child could do it

Equipment

  • Pressure cooker

Ingredients

  • Condiment, cube, or tube
    • Vegetable stock - 1
  • Drink or liquid
    • Water - some
  • Vegetable
    • Carrot - some
    • Celery - some
    • Onion (chopped) - some

Method

Chop some celery, some carrots, and an onion as finely as you can. Fry them a little in your pressure cooker. Add some water and crumble a stock cube in, put the lid on your pressure cooker and bring it to pressure, and then cook your soup in it for about half an hour. For a little extra touch of umami, add a bit of stilton cheese to the mixture before putting the lid on.

Once it's done, either mash it a little with a masher if you think the lumps are bigger than you like your soup to be, or serve as is.
