Pasta with halloumi

As a meat eating person I've concluded that eating chicken with pasta is a waste of nice pasta, a waste of nice pasta sauce, and a waste of nice chicken. So I have diced halloumi with it instead

Ingredients
- Condiment, cube, or tube
- Tomato puree - some
- Vegetable stock - 1
- Drink or liquid
- Water - some
- Wine (red) - some
- Eggs / cheese / dairy
- Halloumi - 1
- Pasta
- Pasta shapes - 150 gm
- Tin or jar
- Beans (mixed) - 1
- Vegetable
- Tomato - 2
- Onion (chopped) - 1
- Pepper (red) - 1
- Garlic (chopped) - 2 teaspoon
Method
Set a pan of water to the boil, and put your pasta along with a bit of salt and oil in it to cook.Fry the onion for a bit, then add the chopped pepper, then add the garlic, and then add some red wine and crumble in the stock cube and a big squirt of tomato purée. Bring to the boil and down to simmer. Grate a bit of salt and pepper into it. Chop the halloumi into cubes. Keep the pan of vegetables nice and saucy by alternately topping up with water and wine as it reduces down.
When you can tell the pasta is just starting to approach the al dente stage, add it to pan of vegetables to cook through; a minute or two before you think the pasta will be done, add the beans, and if you like dried herbs in your pasta, add some of that too. Add the pasta with a bit of the pasta cooking water (not too much, though), stir it through to finish off, and serve. If you like parmesan cheese with your pasta food, grate some of that over the top.
