Pancakes

Breakfast - Vegetarian

Not just for pancake day, for any day. Batter best made the night before and left to stand overnight in the fridge.

Cooking method: Pan fry

Time: Quick - less than 30 minutes
Difficulty: Easy - a child could do it

Equipment

  • Frying pan
  • Jug
  • Whisk

Ingredients

  • Eggs / cheese / dairy
    • Eggs - 2
    • Milk - 300 ml
  • Flour / sugar / baking
    • Flour (plain) - 100 gm
  • Oil
    • Vegetable - 1 tablespoon

Method

Mix all the ingredients together in a jug and whisk into a smooth batter.

If you've been able to get it together to make the batter the night before, leave to stand in the fridge overnight. The next morning, take it out of the fridge and whisk it all back together again if it has started to separate.

Get the pan to medium hot with some oil (or preferably butter), pour a dollop of batter in and spread it around, fry until it's loose and turn over with a spatula to do the other side, and put to one side. Do the next one, repeating until you've either run out of batter or you've made enough.

If they've gone cold whilst you've been making them, reheat for a few seconds in the microwave. Serve with your favourite pancake accompaniments.
