Spaghetti bolognese

Ingredients

  • Condiment, cube, or tube
    • Tomato puree - some
    • Beef stock - 1
  • Drink or liquid
    • Wine (red) - some
  • Meat
    • Pancetta (chopped) - 1
    • Beef (minced) - 250 gm
  • Pasta
    • Spaghetti - some
  • Vegetable
    • Garlic (chopped) - some
    • Olives - some
    • Carrot - 2
    • Tomato - 2
    • Onion (chopped) - 1

Method

Chop the onion and the carrots, and fry them with the pancetta cubes in the frying pan for a bit.

Add the garlic and some chopped olives together with the minced beef, and fry for a little bit longer. Chop the tomatoes and add them to the pan to fry for a bit. Set the spaghetti pan to boil.

Add a big glug of red wine, together with the stock cube and a squirt of tomato puree, and some salt and pepper and let the whole thing simmer for a goodly while. At some point, set the spaghetti cooking. As the sauce is simmering, keep it moist by adding alternately red wine and a bit of the water from the spaghetti pan. Once the spaghetti is cooked, serve with grated Parmigiano-Reggiano cheese.
